Greek Chopped Salad with Chicken

4 Servings, about 3 cups each



  • 1/3 cup of red-wine vinegar

  • 2 tablespoons of extra-virgin olive oil

  • 1 tablespoon of chopped fresh dill or 1 tablespoon of dried oregano

  • 1/4 teaspoon of salt

  • 1/4 teaspoon of fresh ground pepper

  • 1 teaspoon of garlic powder

  • 6 cups of romaine lettuce

  • 2 1/2 cups of chopped cooked chicken

  • 2 medium tomatoes - chopped

  • 1 medium cucumber (peeled, seeded and chopped)

  • 1/2 cup of finely chopped red onion

  • 1/2 cup of sliced black olives

  • 1/2 cup of crumbled feta cheese



  1. Whisk oil, vinegar, gill (or oregano), garlic powder, pepper and salt into a large bowl. Add the lettuce, tomatoes, onion, cucumber, chicken and feta; toss in bowl to coat with mixture. Serve and ENJOY!


Tip: Cook the chicken ahead of time to have ready when you serve the salad. You can cook the chicken in the oven or in a skillet on the stove top.
