
Greek Chopped Salad with Chicken

Ingredients

1/3 cup of red-wine vinegar

2 tablespoons of extra-virgin olive oil

1 tablespoon of chopped fresh dill or 1 tablespoon of dried oregano

1/4 teaspoon of salt

1/4 teaspoon of fresh ground pepper

1 teaspoon of garlic powder

6 cups of romaine lettuce

2 1/2 cups of chopped cooked chicken

2 medium tomatoes - chopped

1 medium cucumber (peeled, seeded and chopped)

1/2 cup of finely chopped red onion

1/2 cup of sliced black olives

1/2 cup of crumbled feta cheese
Preparation

Whisk oil, vinegar, gill (or oregano), garlic powder, pepper and salt into a large bowl. Add the lettuce, tomatoes, onion, cucumber, chicken and feta; toss in bowl to coat with mixture. Serve and ENJOY!
Tip: Cook the chicken ahead of time to have ready when you serve the salad. You can cook the chicken in the oven or in a skillet on the stove top.
