Mushroom & Sausage Quiche

  • 8 oz. of breakfast turkey sausage (crumbled)

  • 1 teaspoon of extea-virgin olive oil

  • 8 ounces of mushrooms (sliced)

  • ¼ cup of sliced scallions

  • ¼ cup of shredded Swiss cheese

  • 1 teaspoon pepper

  • 5 eggs and 3 egg whites

  • 1 cup of milk



  • Preheat oven to 325°F and coat a nonstick muffin tin with cooking spray.

  • Heat a nonstick skillet over medium-high heat. Add sausage and cook until golden brown (6-8 mins). Transfer to a bowl to cool. Oil the pan, add mushrooms and cook until golden brown (5-7mins). Transfer mushrooms to the bowl with the sausage. Let cool and stir in scallions, cheese and pepper.

  • Wisk eggs, egg whites and milk in a bowl. Divide the egg mizture evenly among the muffin cups. Sprinkle a heaping tablespoon of the sausage mixture into each cup.

  • Bake until tops are light brown (about 25 minutes). Cool for 5 minutes. Serve and ENJOY!
