Paprika Shrimp and Green Bean Saute

4 servings, about 3/4 cup of sauce each

 

Ingredients:

  • 2 cups of salad beans (or other beans), rinsed and divided

  • 2 tablespoons of extra-virgin olive oil

  • 1/2 cup of chopped carrot

  • 1/2 teaspoon of salt

  • 1/4 cup of chopped celery

  • 1 small onion chopped

  • 4 cloves of garlic (chopped)

  • 1 bay leaf

  • 1/2 cup of white wine

  • 8 oz. of whole wheat fettucine

  • 2 cups of diced tomatoes

  • 1/4 cup of fresh chopped parsley (divided)

  • 1/2 cup of fresh grated parmesan cheese

 

Preparation:

  1. Bring 1 inch of water to a boil in a large saucepan. Put green beans in steamer basket, place in the pan, cover and steam (4-6 minutes).

  2. Meanwhile, heat the oil in a large skillet over medium-high heat. Add the garlic and paprika, cook; stirring constantly, until fragrant but not browned (20 seconds). Add the shrimp and cook until pink (2 minutes per side). Stir in beans, vinegar and salt; cook stirring occassionally, until heated trhough (2 minutes), then stir in 1/4 cup of chopped parsley.

  3. Divide the green beans onto 6 plates. Place the shrimp mixture atop the green beans. Sprinkle the remaining parsley and the pepper (to taste). Serve and ENOJY!

 

Serve with white or brown rice.
