Smoky Corn and Black Bean Pizza

Ingredients

  • 1 plum tomato (diced)

  • 1 cup of black beans (rinsed)

  • 1 cup of fresh corn kernels (about 2 ears)

  • 2 tablespoons of cornmeal

  • 1 pound of prepared whole wheat pizza dough

  • 1/3 cup of barbeque sauce (your choice)

  • 1 cup of shredded mozzarella (preferably smoked)

 

Preparation

  1. Preheat the grill to medium

  2. Combine the beans, tomato and corn in a medium bowl. Sprinkle the cornmeal onto a large baking sheet. Stretch the dough into a 12 inch circle and lay it on top of the cornmeal. Make sure the whole underside is coated.

  3. Transfer the crust from the baking sheet to the grill. Close the lid and cook until the crust is lightly brown and puffy (about 4-5 minutes)

  4. Using a large spatula, flip the crust. Spread barbeque sauce on it and quickly sprinkle with the tomato, bean and corn mixture along with the cheese. Close the lid and grill until cheese is melted and the bottom crust is browned (about 4-5 minutes). Serve and ENJOY!
