Ingredients Dressing

2 medium - 2 inch wide Zucchini

1/2 teaspoon of both salt and pepper

1 tablespoon of extra-virgin olive oil

1 tablespoon of white wine vinegar

1 tablespoon of minced shallot

1 cup quartered grape tomatoes

1/2 cup of diced mozzarella cheese

1/4 cup of thinly sliced basil
Preparation

Trim both ends of zucchini - cut in half lengthwise. Scoop out the pupl, leaving a 1/4 inch shell. Finely chop the pulp up and set aside.

Place zucchini halves in microwave safe dish, sprinkle with 1/4 tablespoon of salt and pepper. Cover dish and microwave on high for 3-4 minutes (Alternative: steam in steamer basket over 1 inch boiling water in skillet or pot).

Whisk oil, vinegar, shallot and remaining salt and pepper in medium bowl. Add tomatoes, cheese, basil and reserved zucchini pulp; toss to combine. Divide the filling among the zucchini. Serve and ENJOY!
